Zucchini & Soft Boiled Egg Toast

In the world of breakfast options, there’s one classic dish that never fails to satisfy both taste buds and hunger pangs: soft boiled egg toast. This simple yet delightful creation brings together the comforting warmth of a perfectly cooked soft boiled egg with the crispy goodness of toasted bread. It’s a match made in breakfast heaven.

This a delicious and satisfying toast that is so easy to make. The fun thing to make is the jammy soft-boiled egg. Once you get the trick of making this kind of soft-boiled egg, it’s easy. It’s more like steaming the egg instead of fully boiled. In a small saucepan put in a little bit of water. The water comes up to 1/4 of the egg’s height. First, boil the water. Then drop the egg into the water and cover. Boil for 6 1/2 minutes. Remove the egg from the water. And peel the egg as soon remove from the pot. I think a jammy soft-boiled egg is best for this dish instead a regular soft-boiled egg that is too runny.


While the egg is boiling you can toast the bread. I used a stove grill pan. I brushed both sides of the bread with olive oil. And popped it on the grill pan. It gives the bread a nice grill mark. Also, I grilled the zucchini in the same pan. I brushed the zucchini with olive oil and seasoning. I put them on the grill and it cooked them with grill marks. After I finished grilling the bread and zucchini, I peeled the jammy egg. And I began the assembly of this zucchini toast.

Ingredients

  • 1 slice of rustic bread and a nice 1 inch thickness
  • 2 Tbsp of whole milk ricotta
  • 1 medium size zucchini sliced length wise
  • 1 egg soft boiled
  • Seasoning (salt and pepper and red pepper flakes)
  • 2 Tbsp Extra Virgin Olive Oil

Preparation

  • In a small sauce pan add a little bit water to not cover the egg
  • Bring water to boil add the egg and boil for 6 1/2 minutes (cover with lid)
  • Heat a skillet or grill pan on medium heat
  • Brush the bread and zucchini strips with olive oil and season
  • Place on the grill and cook for 2 to 3 minutes each side
  • Remove bread when bread is toasted and zucchini is soft to the touch
  • After 6 1/2 minutes remove the egg, and peel the egg.
  • Assemble the toast
  • Spread the ricotta onto the toast,
  • Layer the zucchini strips onto the cheese
  • Add the jammy soft boiled egg and cut open
  • Season and drizzle with olive oil
