Roasted Garlic Dressing

Ingredients

  • 1 whole garlic bulb
  • 1/4 cup olive oil
  • 1/2 of a lemon
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and pepper to taste
  • Red Pepper Flakes (optional)

Preparation

Step 1: Roasting the Garlic Preheat your oven to 400°F (200°C). Take the whole garlic bulb and slice off the top, exposing the cloves. Place the bulb on a sheet of aluminum foil, drizzle it with a little olive oil, and wrap it tightly in the foil. Bake in the preheated oven for about 40 minutes, or until the garlic cloves are soft and golden brown. Once roasted, let the garlic cool for a few minutes.

  • Step 2: Preparing the Dressing Squeeze the roasted garlic cloves out of the bulb and transfer them to a mixing bowl. Mash them with a fork until you have a smooth paste. To this, add the olive oil, lemon juice, white wine vinegar, Dijon mustard, and honey. Stir well to combine all the ingredients. If desired, season with salt and pepper according to your taste preferences.
  • Step 3: Storing and Serving Transfer the Roasted Garlic Dressing to a jar or airtight container. Refrigerate it for at least 30 minutes before serving to allow the flavors to meld together. The dressing can be stored in the refrigerator for up to a week

  1. I get through loads of confit garlic. It’s not prepared by your method, but is slow-cooked in good oil (with flavourings to taste), but the end result isn’t very different: a ready supply of sweet garlic, full of rich flavour and no hint of harshness. Always on hand, and mostly better than using garlic fresh.
